Personally, I think number of stars is more relevant than type (unless store/limited/holy paladin is involved), although others may disagree.

Personally, I often say that:
a 5* = two 4*
a 4* = two 3*
a 3* = two 2*

But I don't like saying "a 4* = four 2*". Because when the difference is bigger than one star, I think people are losing in the trade. I mean it's easier to get several little creatures (2*) than a single bigger creature (4*)

Ok, got a new one. Three trades offered for the same creature. All offered creatures are on my WL.

This is the one they want:
- 4 * familiar creature

Here's the offers:

#1 3* Quest, and the others are 2* Familiar

#2 2* Hidden, and the others are 2* Familiar

#3 Both 2* Familiar

Given the interest in mine, I was wondering if it was actually worth something, or not.

In my opinion, your creature worth another 4* or two 3*. The most interesting trade in my opinion is the first one.
Because if we think like this :
One 4* = two 3*
One 3* = two 2*
The trade is good.

But in my opinion you will lose a bit if you trade creatures with more than one star of difference. I would not trade my 4* with 2* (or I will wait many 2*). So I would refuse all the offers.
I say this because several 2* are really easier to get than a single 4*.
